A Cup of Coffee Cake (in Under Five Minutes)


I don't love chocolate. BLASPHEMY I KNOW! It just doesn't do it for me, what can I say? I do, however, love me some cinammon. And some crumbles. And some crumb-topping,if you will. Can I get a what what? Is anyone with me?

But okay, I don't always feel like making a giant coffee cake and eating it for three days straight until it's gone. No, wait, that's a lie. I do want to do that, but it's really for the best if I can just make a single-serve coffee cake. Reduces temptation, right?

So I messed around with ingredients, a measuring spoon, and a microwave, to see if I could create a crumbly, cinnamony coffee cake in a cup that could be made in a microwave in about five minutes at 11 p.m. while i watched The Notebook for the 5,000th time (hey girl, don't even try to pretend you don't love Ryan Gosling, I won't hear it). I think I've come up with a decent substitute for coffee cake, considering the small amount of time and effort that goes into it. Give it a try and tell me if you disagree.  But again, don't try to disagree with me about Ryan Gosling.

How to Make Five Minute Microwave Coffee Cake in a Coffee Cup

Well, first you'll need a cup. If you want it to puff up over the top of the cup, use a small one. Or if you want to dig into the cup, use a big one. It matters not.


Add a tablespoon of butter.


Soften it in the microwave for 10-15 seconds. Don't melt, just soften.


Stir in 2 tablespoons of sugar until it's fluffy and creamy, maybe 30 seconds.


Now you can add some egg. you don't have to, but without egg it's more crumbly and less cake-y. You can do a whole egg, but I like to break the egg into a ramekin and stir it up, then split it between two cups of coffee cake, or just use half for one coffee cake. But really, play it by ear. Try it out and see what tastes best to you.


Then stir in 2 tablespoons of sour cream and a few drops of vanilla. We're talking droplets here, don't add too much.



Stir in 1/4 cup of flour and 1/8 teaspoon baking poweder.


If you want some crumb topping (you know you do), in a separate ramekin or bowl add 1 tablespoon butter, 2 tablespoons flour, 1 tablespoon of brown sugar, and 1 teaspoon of cinnamon.


Smoosh it together with your fingers for a few.


Now back to your cup. Your ingredients are all mixed up, so...


Add the crumb topping mixture to the cup...


Then microwave it. Start with 1 minute, then do 10 seconds more until it's done to your liking. For my microwave, a minute 20 seconds does it perfectly.


It will be REALLY HOT when you take it out of the microwave.


Let it cool down for a few seconds, then dig in.


This is basically a start for a quick microwave coffee cake in a cup recipe, you can adjust to your own tastes and liking, since this is a serving for one after all. I like it just like this, but my husband doesn't mind it without the egg. You may want more of this or less of that to suit your tastes. I look forward to hearing any adjustments you make and finding out if cake in a cup seems worth it to you. Ok, now i'm hungry, off to find my measuring spoon and a clean cup.

Sandi - When I want an over easy egg, but don't want to do the whole frying pan bit, I just micro it for a minute or so. Two just a bit longer. They come out a bit crispy on the edges, but fully cooked. Yes, it is safe.

I agree with you on the cinnamon > chocolate thing. But I used the last of my cinnamon in a mix of pumpkin spice the other night. And I have a thing about "wasting" half an egg. (I know. I'm a depression child in the wrong generation.) So an idea was born. I subbed a scoop of canned pumpkin for the egg. DELISH!!!

Hi, I Loved this recipe and i LOVE crumb cake, but my fiancé doesn´t like crumb cake, he does like chocolate, do you think if I remove the vanilla part and add like a tablespoon and a half of hershey´s powder into the mix (and of course the crumb part) will work?.

Keep the vanilla in but replacing the cinnamon with chocolate powder might work. Vanilla will really compliment chocolate well (the fancy hot chocolate recipe on the side of the hershey's powder container calls for vanilla). I'd also add the chocolate in right after the butter and stir stir stir. Tell us how it goes!
I'm going to give this recipe a try right now! I don't have any sour cream or yogurt, I'll just have to give it a try with half and half and reduce the amount a bit. Toodles!

I made this recipe with half and half instead of sour cream and I tried it first with whole grain spelt flour, then with brown rice flour. Both were excellent, though the brown rice flour batch was lighter and fluffier. I'm sure it would have been more moist with sour cream, but it was great with half and half. I also put about 1/3 of the teaspoon of cinnamon in the cake batter instead of all of it in the crumbs. This recipe is a definite keep!

Really good! I made two (used the whole egg *smile*). One was strictly by the recipe, and the other I subbed turbinado sugar for the white one, and plain Greek yogurt for the sour cream. Since I'm really Southern, I added chopped pecans (yes, PEEcans) to the crumb topping, and honestly think the yogurt gave a slight tang to it that I liked better, but either way is awesome! A definite for the next grandkids visit. Gotta pin this one!

Just tried it! I used plain Greek yogurt, and I used egg beaters instead of a whole egg (made it easier to divide). The first one was good, but I made hubby's by lightly stirring the crumb topping into the batter and I added a bit of cinnamon to his batter. I think it was better.

I'm back to say I tried this and it's awesome!!! I've tried other "one mug" recipes and frankly, they all sucked.

I've made this several times now and each time I used one whole egg. I never have sour cream in the house, so the first few times, I used yogurt instead. It was good. I ran out of yogurt, so I used cream cheese and it's just as good.

I read this and made it immediately. A few subsitutions: greek yogurt for sour cream and a butter spread (made with canola oil) for the butter. Also, I didn't use an egg. And...it came out delicious! Even without the egg, it came out very moist. Next time, I may throw it under the broiler to make the crumble topping a little crispy. YUM!

I used egg beaters, 1/8 cup, instead of the partial egg. My son and I made four batches, one for each family member. We made them in bowls rather than mugs. They turned out great! The portion was too large for my kids (5&7yrs), and nearly too big for me. Next time we'll add finely chopped apples. Thanks for the recipe!

I made this recipe this morning. I found it on pinterest......oh how I love that place. But I digress. I was out of sour cream so used some Greek yogurt instead and it still turned out great. Thanks for doing the hard part for the rest of us. : )

Just got done making it! Excellent! Definitely easy to over cook, so one minute ten seconds is all I needed! Added a little more cinnamon and used uncooked oats for the topping, along with everything else, and half an egg. YUM!

This was a great variation on the chocolate mug cake I've been eating lately, but it came out a little eggy for me- I only used half of the egg. I know the chocolate mug cake uses coconut or canola oil instead of an egg- anyone tried this?

Made it with yogurt (nonfat plain-I never have sour cream). Was delish. 1 min 20 sec works here too. Just right for when you have a cakey sweet tooth.

I was only making one, and didn't want to waste 1/2 an egg, so I subsituted app. 1 tsp of water, used Greek yogurt, and almond flavoring instead of vanilla...left the cinnamon out this time. No particular reason, just an almond night. It was delicious :)

I had to try this, i was pretty sure i had all the ingredients when i was about to grab the sour cream...didn't have any! So i read threw the comments and a lot of people used yogurt, all i had was vanilla yogurt, so i tried it and left out the vanilla extract! Turned out great! Thanks for the awesome recipe:)

I just found this on Pinterest, and of course I had to try it. I love chocolate but not chocolate cake, but that never stopped me from trying microwave "cake in a mug" recipes. (There are very few chocolate cake recipes I do actually like.) I never liked any of them. But being me, I had to try this out and I am SO glad that I did! So yummy! I love cinnamon coffee cake but hate having to make a big pan of it when I'm the only one who eats it. (Ok, I love it, but my waistline is not so fond of it. lol) I started whipping this up and discovered we're out of sour cream. I thought no problem, I'd substitute some plain yogurt or some applesauce. We're out of both of those too. We normally have all these things on hand at all times... shame on me for having the flu and neglecting shopping all week I guess. lol So I finally just substituted some soured milk (milk + white vinegar) and added a touch of extra butter. It still turned out fantastic! Adding this to my 'favorites' recipe box for sure! Thanks so much for taking the time to come up with this recipe & for sharing it!

Just made this substituting yogurt for sour cream since I didn't have any. I made two at once, after microwaving the first one i notice it got a little overcooked, so i microwaved the 2nd one for 45 seconds and that turned out better. It tasted like it still needed a little something so I topped it off with some honey, and mixed in 1/8 tsp of salt, turned out really well, I always have a sweet tooth but can't make a whole dish because I will consume 70,000 calories alone, but this satisfied it, Thank you

I tried a bigger version of this & then baked it in my convection oven in individual ramekins. My family yummed it down! There was barely a word said til it was gone. This is going to be my standard coffee cake recipe from here on. Thank you for the inspiration!

I made this last week, and am about to make it again.
I am allergic to chocolate, so finding a non-chocolate Mug Dessert is like a angel falling on my head from Heaven. Both rarely awesome and a little dangerous.

Wow. I just made this as a late snack; used buttermilk instead of sour cream and added some coffee-flavor extract. It was delicious. My hubby liked it and was in awe that it was made in the microwave! thanks for sharing :-)

Ashleybrook, 350 degrees, check after 10 min, then after 15, then after 20 til done. then when you know how long to do it for, cut back about 3 minutes because every time you checked it you lost a lot of heat and had to reheat the oven.

(check by inserting a toothpick into center. it's done when it comes out clean.)

Sounds delicious but for cutting calories and other fats will be using just an egg white which will still allow for the fluffiness and plain greek yoguart in place of the sour cream cant wait to try it!

I really want this to work, but my cake isn't coming out all fluffy and delicious looking like yours. I tried with 1/2 an egg - tasted too eggy. I tried no egg 0- heavy and dry. Any ideas what I'm doing wrong?

If it didn't turn out fluffy, I'd suggest that the baking powder was flat, to old. BUT since you said it was to eggy, perhaps you just forgot the baking powder? I used a whole egg and it wasn't eggy at all.

My grandson wanted apple sauce cake, I wanted NOT to have left overs to tempt me, so I made this with applesauce in place of the Sour cream. it turned out light and fluffy.

Here's how I tweaked this recipe. It's gluten-free, dairy-free, high protein and lower-carb than the original. It's also free of refined sugars.

1 Tbsp Earth Balance soy-free margarine instead of the butter
2 Tbsp Xylitol instead of the sugar
1 egg (use the whole egg)
2 Tbsp Tofutti better than sour cream instead of the sour cream (I'm going to try cream from coconut milk next time)
splash of vanilla
2 Tbsp coconut flour in place of 1/4 c flour (if you use 1/4 c coconut flour it is VERY DRY)
1/8 tsp baking powder

Crumb topping:
1 Tbsp Earth Balance margarine
1 Tbsp coconut flour in place of the flour (again, using half)
1 Tbsp sucanat in place of the brown sugar

Thanks for the base recipe - it made an excellent springboard!

I'm sorry but when I made it it didnt turn out like the pic at all and it was gross. it came out in one big glob and didn't even resemble a cake. It almost looked like overcooked oatmeal.
