Fresh Fruit Pie


This pie was always a favorite for Summer birthdays in my family. We weren't big into cake (I know, crazy.) I love this pie most because you can use whatever fruit is in season and any combination, really. Blueberry is the best but peach is amazing and strawberry is really good too. Blueberry and Peach? I can't even stand how delicious this is. Lucky for us, so much is abundant and inexpensive this time of year. Experiment with any fruit you have on hand! I bet nectarines and raspberries would be so good! The other great part about this pie is that the filling isn't baked.

Early Preparation: The pastry can be pre-baked a day in advance. The filling should be made early in the day, and the pie filled and set to chill at least 3 hours before serving. This pie should be served same-day but definitely eat leftovers for breakfast.

Filling:
4 cups any combination of fresh berries and/or un-peeled, cut-up, stone fruit, picked over, washed, hulled (if necessary) and drained until dry, divided (1 1/2 cups and 2 1/2 cups),
2/3 to 1 cup granulated sugar (depending on sweetness of fruit)
3 tablespoons cornstarch
1 cup water
1 tablespoon fresh lemon juice, or more as needed
2 tablespoons unsalted butter



Preparation
Prepare the pastry, roll it out, and line the pie plate. Prick the pastry bottom with a fork and chill until firm. Preheat the oven to 425°F. Completely blind-bake the shell. I used a frozen pie crust this time but use your favorite pie crust.


In a food processor or using a fork, mash 1 1/2 cups of the cut-up mixed fruit or berries.


Measure the sugar, cornstarch, and water into a saucepan and whisk until smooth.


Stir in the mashed fruit and cook over medium-low heat for 7 to 10 minutes, or until the mixture is thick and clear. Remove from heat and stir in the lemon juice.



Taste the cooked sauce and correct the balance of sugar and lemon if necessary. Stir in the butter and all the remaining cut-up fresh fruit and berries. Firm fruits like pears or plums are best slightly mashed into the cooked sauce, while softer fresh fruits and berries should simply be stirred in.


Chill until partially thickened, then spoon into the cooked pastry shell and chill for at least 3 hours to set.


Serve with ice cream or sweetened whipped cream.


Optional Note: If you want to make the presentation for a strawberry pie a little more special, cut some berries in half, stir them in a little of the sauce and arrange on top.

My MIL has a similar recipe that involves an instant jello pack. When I first married my hubby I wanted to impress him (of course by showing him I was a better cook than his mother) and when I made the pie I forgot the jello pack...so it tasted like nothingness.

Recently, I tried the pie again (after taking a four year break) and this time the filling was perfect...except I forgot to prebake the crust...so THIS time it tasted like gooey sadness.

I think I need to try this one to boost my baking ego!....and still prove that I am better than his mother:)

When I was a child my favorite summer dessert was strawberry shortcake - my grandma made it from scratch and we ate it around the pool . . . yummy.
Now my summer dessert is eating strawberries from the garden, warmed by the sun. Much less work, but still . . . yummy.

My oldest daughter and I dont like cake either. For her birday dessert tonight we are having our favorite, cheesecake. I am also a big fan of strawberry rhubarb pie.

BUT, the way I am in the kitchen, probably something would become in flames or worst! :P
So, my favourite deserts for summer are: make a juice of fruits and put in the freezer or mix fruit with yogurt and put in the freezer, nothing that uses a oven...

I like an ice cream pie in summer. Take an Oreo crust, layer with softened ice cream of choice (I like cookies and cream), freeze, then a layer of chocolate syrup, freeze, then a layer of crumbled up cookies and topped with whip cream or cool whip, freeze again and enjoy. Yum, yum, yum, I think I need to make it!

Mmmm, this looks so good! It reminds me of the pies my grandma put together with random mixed fruits and berries - they always tasted so good and showed me that you don't have to follow a perfect recipe to have a good pie. :)

This pie sort of makes me think of Snow White- the heart scene, where the hunter is supposed to bring back the princesses heart. If you look at the very top picture, it looks like a bunch of hearts. Yum. (blech)

My favorite summertime dessert is frozen lemonade (or lemon sorbet if you're fancy).

I've made a few variations of it for my hubby. The problem is I'm not a big pastry fan, so I'm not really sure of filling combinations. Cherries + blueberries= yum yum! Peaches + chocolate chips= blech!
