Mmm, Brain Muffins
MMM, delicious brains. Perfect zombie food. These are pumpkin muffins with cream cheese, but this icing contains no powdered sugar, so the muffins have yummy cream cheese flavor and low sugar that's appropriate for breakfast.

These muffins are made from Trader Joe's pumpkin bread mix and they are deelish:
For the cream cheese icing mix the following ingredients together:
-One 8oz package of cream cheese
-2 tablespoons butter (softened)
-1 teaspoon vanilla
-2 tablespoons brown sugar
Mix for a minute then add 1 tablespoon of honey and beat until it's really light and fluffy:
To create the gross pinkish brain appearance I added one drop of red and one smaller drop of purple gel food coloring. To apply brains to muffins I used a disposable pastry decorating bag and a #12 tip but all that is not really necessary. You can just make a cone of parchment paper and squeeze the frosting through, or even use a plastic baggie with a corner cut off:
Start by making two rows of zig zags down the center to give some good right lobe/ left lobe definition, then fill in with more squiggles:

These are so creepy and yet, I want to stuff 5 in my mouth.
I am making these for a Halloween party we are going to on Saturday...
Freeze water or juice in a plastic/latex glove to keep your punch cool and creepy. Just remember to use powder free gloves if you're going to peel the glove off the ice hand.
