Simple Stuffed Mushrooms
Not exactly the sexiest looking food in the world, but we love mushrooms in the Curtis household so I thought I'd share. These make a quick dinner and can be put together with just about anything you have in the fridge. They're also the first thing to disappear at dinner parties. I read a good tip for transporting them too - put them in a mini-muffin tin! Get the recipe after the jump...
Simple Stuffed Mushroom Recipe
Ingredients:
12 or so mushrooms
Tablespoon Olive Oil
Clove garlic
One package of cream cheese
Anything else you think might be delicious in a mushroom
Wash your mushrooms and remove the stems, then chop the stems up.
Heat the tablespoon of oil in a pan and cook the stem bits
When the liquid starts releasing from the mushroom stems add a minced or smashed clove of garlic, continue to cook until the liquid is gone
Let that cool a bit then mix in a package of cream cheese and some spices. I like to grate a little bit of onion into them, add 1/4 teaspoon of pepper and maybe some red pepper for bite, but really anything works.
You can spoon this into the mushroom or put it in a ziploc bag and cut off a corner, then squeeze it into the mushrooms.
You can put some bacon in the mushrooms first, or spinach, or add green onions or diced carrot or whatever is about to go bad in your vegetable drawer.
Bake at 350 for about 15 minutes, until the mushrooms are brown and sitting in pool of liquid.
Eat!

Jaime and I went to St. Louis for work once and didn't eat anything green for 5 days straight. But the meal that stands out most was a plate of stuffed mushrooms that were covered in GRAVY! Someone thought... these stuffed mushrooms aren't quiet decadent enough, how can we top these off? I know!! Gravy!! Mmmm, now let's go get some frozen custard.
